  • 1 pint cherry tomatoes (about 250 grams)
  • 8 ounces fresh mozzarella balls (bocconcini)
  • 20 fresh basil leaves
  • 1/4 cup balsamic glaze (60 ml)
  • 2 tablespoons extra virgin olive oil (optional)
  • Salt to taste
  • Freshly cracked black pepper to taste
  • About 20 wooden skewers or toothpicks

Instructions

  1. Rinse the cherry tomatoes and fresh basil leaves gently under cold water and pat dry with a clean towel. Drain the mozzarella balls well to avoid excess moisture on the skewers.
  2. Thread one cherry tomato onto a skewer, followed by a fresh basil leaf (folded if large), then a mozzarella ball, and finish with another tomato to create a red-white-green pattern. Repeat until all ingredients are used up, making about 20 skewers.
  3. Arrange the skewers on a serving platter. Sprinkle a tiny pinch of salt and freshly cracked black pepper over the top to bring out the flavors.
  4. Lightly drizzle extra virgin olive oil over the skewers just before serving, if desired.
  5. Using a spoon or squeeze bottle, drizzle the balsamic glaze evenly over the skewers. If the glaze is too thick, warm it gently in the microwave for 10 seconds to loosen it up.
  6. Let the skewers sit for 5 minutes at room temperature for the flavors to meld slightly before serving (optional).

Notes

Use firm, ripe cherry tomatoes for best flavor. Tear basil leaves gently to avoid bruising. Warm balsamic glaze slightly for easier drizzling. Store leftovers covered in the refrigerator for up to 24 hours and bring to room temperature before serving.
