  • 4 cups chicken broth, preferably low sodium
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until softened and translucent.
  2. Add minced garlic and stir for 30 seconds until fragrant, being careful not to burn.
  3. Sprinkle in chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Stir constantly for 1 minute to toast the spices.
  4. Nestle chicken breasts into the pot and pour in chicken broth. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 15-20 minutes until chicken is cooked through.
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the pot.
  6. Stir in black beans, corn, and diced tomatoes with their juices. Simmer uncovered for 5-7 minutes to meld flavors and slightly thicken the soup.
  7. Squeeze fresh lime juice into the soup and season with salt and pepper to taste. Stir and let rest for a couple of minutes before serving.
