Easy One-Pan Honey Garlic Salmon Recipe with Roasted Asparagus and Quinoa for Quick Dinners

  • 4 salmon fillets (about 6 oz / 170 g each), skin-on if possible
  • 3 tablespoons honey (raw or local honey works best for richer flavor)
  • 3 cloves garlic, minced (fresh garlic is key here)
  • 2 tablespoons soy sauce (use low-sodium for a lighter taste)
  • 1 tablespoon olive oil (or avocado oil for a higher smoke point)
  • Juice of half a lemon
  • Salt and freshly ground black pepper, to taste
  • 1 bunch fresh asparagus (about 1 lb / 450 g), trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • 1 cup quinoa (170 g), rinsed well
  • 2 cups water or low-sodium vegetable broth (480 ml)
  • Pinch of salt
  • Optional: chopped fresh parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse 1 cup (170 g) of quinoa in a fine mesh sieve under cold water for about 30 seconds. Add quinoa and 2 cups (480 ml) of water or broth with a pinch of salt to a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  3. In a small bowl, whisk together 3 tablespoons honey, 3 minced garlic cloves, 2 tablespoons soy sauce, 1 tablespoon olive oil, and juice of half a lemon. Set aside.
  4. Trim the woody ends off 1 bunch of fresh asparagus. Toss with 1 tablespoon olive oil, salt, pepper, and optional red pepper flakes. Spread asparagus evenly on one side of an oven-safe skillet or baking sheet.
  5. Pat salmon fillets dry and season both sides with salt and pepper. Place fillets skin-side down on the other side of the pan. Spoon about half the honey garlic glaze evenly over the salmon.
  6. Place the pan in the preheated oven and roast for 12-15 minutes until salmon flakes easily and asparagus is tender-crisp and slightly browned.
  7. Remove the pan from the oven and spoon the remaining glaze over the salmon and asparagus.
  8. Serve salmon and asparagus alongside a generous scoop of fluffy quinoa. Garnish quinoa with chopped fresh parsley or cilantro if desired.

Notes

If garlic browns too quickly, tent the pan loosely with foil after 10 minutes. Thicker salmon fillets may need 2-3 extra minutes in the oven. For gluten-free, use tamari instead of soy sauce. Leftovers store well up to 2 days; reheat gently in oven at 300°F for 10 minutes. Avoid microwaving to prevent rubbery texture.
