  • Pinch of salt (optional)

Instructions

  1. Combine the dry ingredients. In your large mixing bowl, add the 2 cups of rolled oats, the 2 tablespoons of ground flaxseed, and the pinch of salt if you’re using it. Give them a quick stir to distribute everything evenly.
  2. Add the wet ingredients. Pour in the 1 cup of peanut butter, the 1/2 cup of honey, and the 1 teaspoon of vanilla extract. Don’t dump them all in one spot—try to distribute them a bit so mixing is easier.
  3. Mix until combined. Start stirring with your wooden spoon or spatula. Keep going until the mixture holds together when pressed between your fingers, about 2 minutes.
  4. Add the chocolate chips. Fold in the 1/3 cup of mini chocolate chips until evenly distributed.
  5. Let the mixture rest (crucial step!). Let the mixture sit for 5 minutes before rolling to allow the oats to absorb the liquid and soften slightly.
