Easy No Bake Cookies Recipe – Gluten & Dairy Free Treats

A quick and easy no bake cookie recipe that’s gluten-free, dairy-free, and perfect for satisfying your sweet tooth without turning on the oven.

  • 2 cups gluten-free rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup peanut butter (natural or regular)
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare a baking sheet by lining it with parchment paper or wax paper. Set aside.
  2. In a medium saucepan, combine peanut butter, coconut oil, maple syrup, and unsweetened cocoa powder. Heat over medium-low heat, stirring constantly until smooth and fully combined (about 3–4 minutes).
  3. Remove the saucepan from heat and stir in the vanilla extract and pinch of salt.
  4. Add the gluten-free rolled oats to the mixture, stirring until the oats are fully coated. If the mixture seems too dry, add an extra tablespoon of peanut butter or coconut oil.
  5. Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet. Flatten slightly with the back of the spoon for a cookie shape.
  6. Let the cookies set at room temperature for about 30 minutes or refrigerate for 15 minutes to speed up the process.
  7. Once the cookies are firm, they’re ready to enjoy!

Notes

If your mixture feels too sticky or wet, add a small handful of extra oats to balance it out. For chewier cookies, use quick oats instead of rolled oats. For chunkier cookies, add chopped nuts or seeds.
