  • Fresh mozzarella balls (bocconcini or ciliegine size)
  • Fresh basil leaves, gently rinsed and patted dry
  • Extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Sea salt flakes or kosher salt, a pinch
  • Wooden or bamboo mini skewers (about 3 inches long)
  • ½ cup (4 fl oz) creamy sunbutter (sunflower seed butter)
  • ¼ cup (2 fl oz) Greek yogurt or dairy-free coconut yogurt
  • 1 tbsp (0.5 fl oz) fresh lemon juice
  • 1 tsp (0.17 fl oz) honey or maple syrup
  • Garlic powder, a pinch
  • Salt and pepper to taste

Instructions

  1. Rinse cherry tomatoes and basil leaves under cool water, then gently pat dry. Drain mozzarella balls well to avoid excess moisture. (About 5 minutes)
  2. On each mini skewer, thread one cherry tomato, one basil leaf (folded if large), and one mozzarella ball. Repeat until all ingredients are used. Arrange neatly on your serving tray. (10-15 minutes)
  3. In a mixing bowl, combine ½ cup creamy sunbutter, ¼ cup Greek yogurt, 1 tbsp fresh lemon juice, 1 tsp honey, and a pinch each of garlic powder, salt, and pepper. Whisk until smooth and creamy. Taste and adjust seasoning as needed. (5 minutes)
  4. Lightly drizzle extra virgin olive oil over the assembled skewers. Sprinkle with a pinch of sea salt flakes and freshly ground black pepper to taste. (2 minutes)
  5. Place the skewers alongside a small bowl of the creamy sunbutter dip for guests to enjoy dipping or drizzling. Serve immediately.

Notes

If prepping ahead, assemble skewers but keep dip refrigerated separately. Add olive oil, salt, and pepper just before serving to keep skewers fresh. Pat dry mozzarella and tomatoes to prevent sogginess. For vegan or dairy-free versions, substitute mozzarella with vegan alternatives and use coconut or almond yogurt. Sunbutter can be substituted with almond butter or tahini. Quick grilling adds a smoky twist but avoid melting mozzarella.
