  • 1 pound (450g) fresh carrots, peeled and cut into sticks or rounds
  • 2 tablespoons (30ml) pure honey
  • 2 tablespoons (28g) unsalted butter, softened
  • 1 tablespoon (15ml) fresh thyme leaves
  • 2 tablespoons (30ml) fresh parsley, chopped
  • 1 clove garlic, minced (optional)
  • 1 teaspoon (5ml) freshly squeezed lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut 1 pound (450g) of carrots into uniform sticks or rounds about ½ inch (1.3cm) thick.
  3. In a mixing bowl, combine 2 tablespoons (30ml) honey, 2 tablespoons (28g) softened unsalted butter, 1 teaspoon (5ml) lemon juice, minced garlic if using, and a pinch of salt and pepper. Whisk until smooth.
  4. Add the carrots to the bowl and toss well to coat every piece with the honey-butter mixture.
  5. Spread the glazed carrots in a single layer on a rimmed baking sheet lined with parchment paper.
  6. Roast for 20-25 minutes, turning the carrots with tongs halfway through, until tender with caramelized edges.
  7. Remove from oven and immediately sprinkle 1 tablespoon (15ml) fresh thyme leaves and 2 tablespoons (30ml) chopped parsley over the hot carrots. Toss gently to combine.
  8. Taste and add extra salt or pepper as needed. Serve warm.

Notes

If carrots look dry mid-roast, drizzle extra honey or melted butter to keep glaze glossy. Add fresh herbs after roasting to preserve flavor. For dairy-free, substitute butter with coconut oil and honey with maple syrup or agave nectar for vegan adaptation. Toss carrots halfway through roasting for even caramelization.
