A quick and fun recipe for mini pepperoni pizzas using mini bagels, perfect for kids’ lunches or snacks. Easy to customize and ready in about 15 minutes.

Ingredients

  • Mini bagels (plain or everything)
  • Pepperoni slices (classic or turkey pepperoni)
  • Shredded mozzarella cheese (freshly shredded preferred)
  • Pizza sauce (store-bought marinara or pizza sauce)
  • Olive oil (for brushing bagel halves)
  • Italian seasoning (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the mini bagels in half and lay them cut side up on a baking sheet.
  3. Brush the cut sides lightly with olive oil.
  4. Spread about 1 tablespoon (15 ml) of pizza sauce on each bagel half.
  5. Sprinkle shredded mozzarella cheese generously over the sauce (about 1/4 cup or 30 g per mini pizza).
  6. Top with 4-5 thin pepperoni slices, spacing them evenly.
  7. Optionally, add a pinch of Italian seasoning or a light dusting of grated Parmesan cheese.
  8. Bake in the preheated oven for 10-12 minutes until cheese is melted and edges are golden.
  9. Remove from oven and let cool for a few minutes before serving or packing.

Notes

Use freshly shredded cheese for better melting. Avoid overloading sauce to prevent sogginess. Brush bagels with olive oil for crispiness. Watch baking time closely to avoid burning. Cool slightly before packing to prevent sticking. Variations include vegetarian toppings, gluten-free bases, and dairy-free cheese alternatives.
