A quick and simple homemade version of fruit snacks using real fruit juice and gelatin, perfect for kids and free from artificial ingredients.

  • 1 cup (240 ml) 100% fruit juice (e.g., grape, cherry, mixed berry)
  • 3 tablespoons (30 g) unflavored gelatin
  • 1 to 2 tablespoons (1530 ml) honey or maple syrup
  • 1 teaspoon (5 ml) lemon juice
  • Optional: 2 tablespoons (30 ml) fruit puree or concentrate
  • Optional: cornstarch or tapioca starch for dusting

Instructions

  1. Lightly dust silicone molds or mini muffin tin with cornstarch to prevent sticking. Set aside.
  2. Pour 1 cup (240 ml) of chosen fruit juice into a small saucepan. Warm over low heat until just warm to the touch, about 2-3 minutes. Do not boil.
  3. Sprinkle 3 tablespoons (30 g) of unflavored gelatin evenly over the warm juice. Let it sit for 2 minutes to bloom.
  4. Whisk gently but continuously until the gelatin fully dissolves, around 2-3 minutes, until smooth and slightly thickened.
  5. Stir in 1-2 tablespoons (15-30 ml) honey or maple syrup and 1 teaspoon (5 ml) lemon juice. Taste and adjust sweetness if needed.
  6. If using, spoon a small amount of thicker fruit puree or concentrate into the molds first, then carefully pour the gelatin mixture over it.
  7. Using a pipette or small spoon, fill each mold cavity with the gelatin mixture quickly before it sets.
  8. Refrigerate the molds for at least 30 minutes, or until the gummies are firm and springy to the touch.
  9. Carefully pop out the gummies. Dust lightly with cornstarch or tapioca starch if sticky, then store in an airtight container in the fridge.

Notes

Bloom gelatin before heating to avoid lumps. Do not boil the juice-gelatin mixture to preserve gelatin’s gelling power. Use 100% natural fruit juice without preservatives for best flavor and texture. Work quickly when filling molds as gelatin sets fast. Dust gummies with cornstarch or tapioca starch to prevent sticking. For vegan option, substitute gelatin with agar agar powder but expect a firmer texture.
