These easy cheesy sausage balls with Bisquick are a quick, savory snack perfect for parties and gatherings, featuring a tender biscuit-like texture and a flavorful blend of sausage and sharp cheddar cheese.

Ingredients

Scale
  • 1 pound ground sausage (mild or spicy breakfast sausage)
  • 2 cups Bisquick baking mix (240 grams)
  • 1 ½ cups sharp cheddar cheese, shredded (170 grams)
  • ¼ cup milk (60 ml, whole milk preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • Optional: a few dashes hot sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Brown the ground sausage in a skillet over medium heat until no longer pink, about 5-7 minutes. Drain excess grease.
  3. In a large mixing bowl, combine Bisquick, garlic powder, onion powder, and black pepper.
  4. Stir in shredded cheddar cheese and milk to the dry mixture until moistened but not runny. Add more Bisquick if too wet.
  5. Add the cooked sausage to the bowl and mix until fully combined. The mixture will be sticky but should hold together when pressed.
  6. Form the mixture into 1-inch balls using hands or a small cookie scoop and place evenly spaced on the prepared baking sheet.
  7. Bake for 20-25 minutes until golden brown and cooked through.
  8. Let the sausage balls rest on the baking sheet for 5 minutes before serving.

Notes

Drain cooked sausage well to avoid greasy sausage balls. Do not overmix the batter to keep texture light. Let sausage balls rest after baking to firm up. You can prepare mixture ahead and refrigerate up to 24 hours before baking. For gluten-free, substitute Bisquick with gluten-free baking mix or almond flour. Use a small cookie scoop for uniform size.
