  • 1 cup (200g) granulated sugar (brown sugar can be used for softer texture)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Optional: pinch of salt (if peanut butter is unsalted)
  • Optional: ½ cup mini chocolate chips or chopped peanuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a non-stick mat.
  2. Combine the peanut butter and sugar in a mixing bowl. Stir together until smooth and creamy.
  3. Add the egg and vanilla extract to the peanut butter-sugar mixture. Stir well until fully incorporated.
  4. Shape the dough into 1-inch (2.5 cm) balls and place them evenly spaced about 2 inches (5 cm) apart on the baking sheet.
  5. Flatten each ball with a fork to create a crisscross pattern (optional).
  6. Bake for 10 to 12 minutes until edges start to turn golden but centers remain soft.
