  • 1 cup (8 oz) mascarpone cheese
  • 2 tablespoons honey (mild floral like clover or wildflower)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • Fresh basil leaves (for garnish)
  • Optional: pinch of freshly ground black pepper

Instructions

  1. Preheat the grill or grill pan to medium-high heat (around 375°F).
  2. Wash and dry the peaches, then slice them in half and remove the pits. If peaches are small, quarter them instead.
  3. Lightly brush the cut sides of the peaches with olive oil to prevent sticking and encourage browning.
  4. In a mixing bowl, combine mascarpone cheese, honey, and lemon juice. Stir gently until smooth and creamy.
  5. Place peaches cut side down on the grill. Grill for 3-4 minutes without moving to get clear grill marks and caramelization.
  6. Flip peaches and grill for another 2 minutes on the skin side to warm through.
  7. Arrange grilled peaches on a serving plate and add a generous dollop of honey mascarpone on top of each peach half.
  8. Tear fresh basil leaves over the peaches for an aromatic finish. Sprinkle a pinch of black pepper if desired.
  9. Drizzle a little extra honey on top for shine and sweetness. Serve immediately while peaches are warm and mascarpone is cool.
