Rich, fudgy brownies with gooey melted dark chocolate chunks that are quick and easy to make, perfect for any occasion and loved by all ages.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, melted
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (120g) all-purpose flour (can substitute almond flour for gluten-free)
  • ¾ cup (75g) unsweetened cocoa powder, sifted
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 ½ cups (270g) dark chocolate chunks (70% cocoa or higher)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang on the sides for easy brownie lifting.
  2. Melt the butter in a microwave-safe bowl or over a double boiler until just melted and warm to the touch. Pour the melted butter into a large mixing bowl.
  3. Add granulated sugar and brown sugar to the melted butter. Whisk vigorously until the mixture looks glossy and smooth, about 1-2 minutes.
  4. Beat in the eggs one at a time, stirring well after each addition. Then stir in the vanilla extract.
  5. Sift together the flour, cocoa powder, salt, and baking powder in a separate bowl.
  6. Gently fold the dry ingredients into the wet mixture using a rubber spatula. Stir just until no streaks of flour remain; do not overmix.
  7. Fold in the dark chocolate chunks carefully, reserving a handful to sprinkle on top before baking.
  8. Pour the batter into the prepared pan and smooth the top with a spatula. Scatter the reserved chocolate chunks evenly over the batter.
  9. Bake for 25-30 minutes. Start checking at 25 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  10. Remove from oven and let cool completely in the pan on a wire rack.
  11. Lift brownies out using the parchment overhang, slice into squares, and enjoy.

Notes

Do not overmix the batter to avoid tough brownies. Use room temperature eggs for smoother batter. Start checking brownies at 25 minutes to ensure fudgy texture. Let brownies cool completely before slicing to prevent crumbling. For dairy-free, substitute butter with coconut oil and use dairy-free chocolate chunks. Optional: add a pinch of espresso powder to enhance chocolate flavor.
