  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips
  • 1012 chocolate sandwich cookies, crushed
  • 1/4 cup (30g) powdered sugar
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 cup (226g) cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Add the eggs and vanilla extract, mixing until fully incorporated.
  2. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips. Chill the dough in the refrigerator for at least 30 minutes.
  3. In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  4. Crush the chocolate sandwich cookies into fine crumbs using a rolling pin or food processor. In a small bowl, mix the crumbs with powdered sugar and melted butter until combined.
  5. Preheat your oven to 350°F (175°C). Scoop out chilled cookie dough and flatten each portion slightly. Add a dollop of the creamy filling to the center, then fold the dough around it, sealing the edges. Roll the stuffed dough balls in the crumble topping.
