Instructions

  1. Soften butter to room temperature (around 70°F or 21°C), finely zest the lemon, and grind the lavender buds until powdery. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3 to 5 minutes.
  3. Mix in the lemon zest and vanilla extract until evenly distributed.
  4. In a separate bowl, sift together the all-purpose flour, salt, and ground lavender.
  5. Gradually fold the flour mixture into the butter mixture with a spatula until the dough just comes together and looks smooth but still soft. Avoid overmixing.
  6. Turn the dough onto a lightly floured surface and gently knead once or twice. Roll out to about ¼ inch (6 mm) thickness. Cut into shapes using a cookie cutter or slice into squares with a knife. Place cookies about 1 inch (2.5 cm) apart on the prepared baking sheet.
