  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup (85g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup (120ml) Bailey’s Irish Cream
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch pan lightly or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until combined and glossy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder.
  4. Gently fold dry ingredients into the wet mixture using a rubber spatula, mixing just until incorporated. Avoid overmixing.
  5. Beat the softened cream cheese with sugar and vanilla extract until smooth and creamy. Slowly add the Bailey’s Irish Cream, mixing until silky without lumps.
  6. Pour half of the brownie batter into the prepared pan, spreading evenly. Dollop half of the cream cheese mixture over the batter in spoonfuls. Repeat with remaining brownie batter and cream cheese mixture on top.
  7. Using a toothpick or skewer, gently drag through the batter in a swirling motion to create marble patterns.
  8. Bake for 30-35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  9. Cool completely in the pan on a wire rack before slicing.

Notes

Use softened cream cheese for smooth swirls. Avoid overmixing the swirl to keep distinct patterns. Chill batter briefly if swirls sink. Use good-quality cocoa powder for best flavor. For gluten-free, swap flour with gluten-free blend. For vegan, use flax eggs, dairy-free cream cheese, coconut oil, and non-alcoholic Irish cream syrup.
