A wholesome and crunchy trail mix featuring toasted oats, nuts, dried fruits, and a subtle Irish whiskey-honey glaze for a nostalgic and delicious snack.

  • 2 cups old-fashioned rolled oats (about 180g), toasted
  • 1 cup raw almonds (140g), roughly chopped
  • 3/4 cup cashews (100g), whole or halved
  • 1/2 cup pecans (50g), chopped (optional)
  • 1/2 cup dried cranberries (60g)
  • 1/2 cup dried apricots (60g), chopped
  • 2 tbsp Irish whiskey (30ml)
  • 3 tbsp honey (60ml), preferably raw or local
  • 1/2 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup sunflower seeds (35g), optional

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Spread the rolled oats, almonds, cashews, pecans, and sunflower seeds evenly on the baking sheet. Toast in the oven for 15-18 minutes, stirring every 5 minutes until oats are golden and nuts fragrant.
  3. While toasting, warm the honey and Irish whiskey in a small saucepan over low heat. Stir gently until blended and slightly thickened, about 3 minutes. Remove from heat and stir in sea salt and ground cinnamon.
  4. Transfer the toasted oats and nuts to a large mixing bowl. Pour the warm honey-whiskey glaze over the mix and stir well to coat evenly.
  5. Gently stir in the dried cranberries and chopped apricots. Let the mix cool completely on the baking sheet or a large tray. Store in an airtight container once cooled.

Notes

Stir regularly during toasting to prevent burning. Warm honey and whiskey gently to preserve flavors. Add dried fruits only after oats and nuts cool slightly to avoid crushing. Store in airtight container to maintain crunch. For vegan version, replace honey with maple syrup.
