CrockPot Chicken Tortellini Recipe Easy Comfort Food Dinner

  • 2 boneless, skinless chicken breasts
  • 16 ounces cheese tortellini (fresh or frozen)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste

Instructions

  1. Soften the cream cheese at room temperature for about 30 minutes. Mince the garlic and measure out your seasonings.
  2. Place the chicken breasts at the bottom of the CrockPot. Season with salt, pepper, and half of the Italian seasoning.
  3. Pour the chicken broth over the chicken, followed by the heavy cream.
  4. Cut the softened cream cheese into small cubes and scatter them over the chicken and liquids.
  5. Cover the CrockPot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  6. Once the chicken is cooked, remove it from the CrockPot and shred it using two forks. Return the shredded chicken to the pot.
  7. Stir in the cheese tortellini and cook on high for an additional 20-30 minutes, or until the pasta is cooked through and tender.
  8. If using spinach, stir it in during the last 5 minutes of cooking. Sprinkle Parmesan cheese over the top and stir until melted.
  9. Ladle the creamy chicken tortellini into bowls and serve warm. Garnish with extra Parmesan and a sprinkle of fresh parsley for a pop of color.
