  • 23 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese (full-fat or reduced-fat)
  • 1/2 cup chicken broth (low-sodium recommended)
  • 2 cloves garlic, minced (or 1/2 tsp garlic powder)
  • 2 tbsp unsalted butter
  • 1/4 cup bacon bits (optional)
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of your crock pot, ensuring they are evenly spaced and not overlapping.
  2. In a mixing bowl, combine the ranch seasoning mix, softened cream cheese, chicken broth, and minced garlic. Stir until smooth.
  3. Pour the creamy ranch sauce over the chicken in the crock pot, ensuring all pieces are coated.
  4. Add the butter in small pats on top of the sauce.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easy to shred with a fork.
  6. Optional: About 30 minutes before the cooking time is up, sprinkle bacon bits over the top.
  7. Once done, garnish with fresh parsley or green onions and serve over rice, mashed potatoes, or pasta.

Notes

For a lighter version, use low-fat cream cheese and skip the butter. If the sauce is too thick after cooking, stir in a splash of milk or chicken broth to thin it out. Leftovers taste even better the next day and can be used in wraps, sandwiches, or salads.
