  • 34 lbs beef chuck roast, trimmed of excess fat
  • 4 cups low-sodium beef broth
  • 1 large onion, sliced thinly
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Freshly cracked black pepper, to taste
  • French rolls or hoagie buns
  • 68 slices provolone cheese

Instructions

  1. Trim the beef chuck roast of excess fat. Season all sides with black pepper.
  2. In the crock pot, add the sliced onion and minced garlic. Place the beef on top.
  3. In a bowl, combine beef broth, Worcestershire sauce, soy sauce, thyme, and oregano. Pour this mixture over the beef.
  4. Cover and cook on low for 8–10 hours, or until the beef is fall-apart tender. (If pressed for time, cook on high for 4–5 hours.)
  5. Remove the beef from the crock pot and shred it using two forks. Return the shredded beef to the crock pot to soak in the juices.
  6. Optional: Split the rolls and toast them lightly in a skillet or oven for added crunch.
  7. Layer shredded beef onto the toasted rolls. Add a slice of provolone cheese on top.
  8. Strain the liquid from the crock pot into a bowl for dipping sauce.
  9. Serve the sandwiches warm with a side of au jus for dipping.

Notes

For extra flavor, toast the rolls lightly before assembling the sandwiches. Strain the au jus for a smoother dipping sauce. If the au jus is too thin, simmer it on the stovetop to reduce and concentrate the flavors.
