Crispy Sweet Potato Toast Recipe with Creamy Avocado and Bagel Seasoning

A quick and easy breakfast featuring crispy toasted sweet potato slices topped with creamy avocado mash and everything bagel seasoning for a savory, satisfying start to your day.

  • 2 medium sweet potatoes, firm and without soft spots
  • 1 ripe avocado
  • 1 teaspoon fresh lemon juice
  • Everything bagel seasoning (sesame seeds, poppy seeds, dried garlic, dried onion, salt)
  • Olive oil, for brushing
  • Salt and pepper, to taste
  • Optional: red pepper flakes for heat
  • Optional: fresh herbs (cilantro or parsley), chopped
  • Optional: crumbled feta cheese

Instructions

  1. Wash and slice the sweet potatoes lengthwise into 1/4-inch (about 6 mm) thick slices, keeping them even for uniform toasting.
  2. Cut the avocado in half, remove the pit, scoop the flesh into a bowl, add 1 teaspoon of fresh lemon juice and a pinch of salt, then mash with a fork until creamy but slightly chunky.
  3. Brush each sweet potato slice lightly with olive oil on both sides.
  4. Toast the sweet potato slices in a toaster or toaster oven on medium-high heat for 4 to 6 minutes per side until edges are golden brown and crispy. Toast in batches if necessary.
  5. Place toasted sweet potato slices on a plate and spread a generous layer of avocado mash on each slice.
  6. Sprinkle everything bagel seasoning over the avocado. Add red pepper flakes if desired.
  7. Optionally, top with fresh herbs or crumbled feta cheese.
  8. Serve immediately for best texture and freshness.

Notes

If your toaster struggles with thick slices, pre-bake sweet potato slices at 400°F (200°C) for 10 minutes to soften before toasting. Use ripe avocado for best flavor and texture. Store toasted slices and avocado mash separately if making ahead; reheat slices in toaster oven and mash avocado fresh to avoid browning.
