  • 1 large egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups fresh spinach, roughly chopped
  • 1 cup crumbled feta cheese
  • 4 large eggs, room temperature
  • 1 cup half-and-half or whole milk
  • 1/4 teaspoon freshly ground nutmeg (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix the thawed hash browns with the beaten egg, melted butter, salt, and pepper until well combined.
  3. Press the hash brown mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Place the crust on a baking sheet and bake for 25 minutes until golden and crispy.
  4. While the crust bakes, heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 4 minutes.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  7. In a bowl, whisk the eggs and half-and-half together. Stir in the sautéed spinach mixture and crumbled feta. Add nutmeg, salt, and pepper to taste.
  8. Lower oven temperature to 350°F (175°C). Pour the filling into the baked crust, spreading evenly.
  9. Bake for 30-35 minutes or until the filling is set and lightly golden on top. If crust edges brown too quickly, tent with foil.
  10. Let the quiche rest for 10-15 minutes before slicing and serving.

Thaw and dry hash browns thoroughly to avoid soggy crust. Press crust firmly for sturdiness. Pre-bake crust at high temperature to crisp. Use room temperature eggs and dairy for even cooking. Tent crust edges with foil if browning too fast. Let quiche rest before slicing for cleaner cuts.
