  • Optional: 1/4 teaspoon smoked paprika or cayenne pepper

Instructions

  1. Heat 2 tablespoons (30 ml) of oil (canola or avocado) in a large heavy-bottomed pot over medium-high heat.
  2. Add 1/2 cup (100 g) popcorn kernels and cover with a lid.
  3. Shake the pot gently every 15 seconds to prevent burning.
  4. When popping slows to 2-3 seconds between pops (about 3-4 minutes), remove from heat and transfer popcorn to a large mixing bowl.
  5. Melt 4 tablespoons (57 g) unsalted butter in a small saucepan or microwave until fully liquid but not browned.
  6. In a small bowl, combine 3 tablespoons white cheddar cheese powder, 2 tablespoons ranch seasoning mix, and a pinch of salt. Add optional smoked paprika or cayenne if using.
  7. Pour melted butter evenly over warm popcorn and gently stir with a wooden spoon or spatula to coat all kernels.
  8. Sprinkle seasoning mix over popcorn in batches, stirring gently between additions to distribute evenly.
  9. Fold in 2 tablespoons finely chopped fresh dill and toss gently to incorporate without bruising the herb.
  10. Taste and adjust seasoning with more salt or ranch seasoning if needed.
  11. Serve immediately for best crispiness.

For extra crispy popcorn, spread coated popcorn on a baking sheet and bake at 250°F (120°C) for 10 minutes. Use fresh dill for best flavor; dried dill can be substituted but is less vibrant.
