  • 810 thin slices prosciutto
  • 12 tablespoons extra virgin olive oil

  • 1/4 teaspoon garlic powder (optional)
  • Zest of 1 lemon (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Trim the asparagus by snapping off the woody ends, about 1-2 inches from the bottom.
  3. Place the trimmed asparagus in a small bowl and drizzle with 1 to 2 tablespoons of olive oil. Add a pinch of garlic powder and freshly ground black pepper. Toss gently to coat evenly.
  4. Cut prosciutto slices in half lengthwise to make wrapping easier and portions bite-sized.
  5. Wrap each asparagus spear starting just below the tip with a half slice of prosciutto, spiraling down to the bottom.
  6. Arrange the wrapped asparagus in a single layer on the baking sheet with the seam side down.
  7. Bake for 12-15 minutes, watching carefully after 10 minutes until the prosciutto is crisp and golden and the asparagus is tender-crisp.
  8. Remove from oven and optionally sprinkle with lemon zest and grated Parmesan cheese while still warm.
  9. Serve warm for best flavor and texture.

Notes

Keep an eye on the oven hotspots and rotate the baking sheet halfway through baking for even cooking. Tent loosely with foil if prosciutto crisps too fast. Avoid overcrowding the baking sheet to ensure crispiness.
