  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons extra virgin olive oil
  • ½ cup grated Parmesan cheese (about 50g), finely grated
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ¾ teaspoon kosher salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Set the rack in the middle position for even roasting.
  2. Rinse the asparagus under cold water and pat dry thoroughly. Trim the woody ends by bending each spear near the base until it snaps naturally.
  3. Place trimmed spears in a large bowl. Add olive oil, garlic powder, salt, black pepper, and optional red pepper flakes. Toss until each spear is evenly coated.
  4. Sprinkle grated Parmesan and lemon zest over the asparagus. Toss gently to distribute evenly.
  5. Arrange the spears in a single layer on a parchment-lined or silicone mat–lined baking sheet, leaving space between spears.
  6. Roast in the preheated oven for 12-15 minutes, turning halfway through, until cheese is golden and asparagus is tender but still crisp.
  7. Remove from oven and drizzle fresh lemon juice over the hot asparagus. Toss gently to coat and serve immediately.

Notes

Dry asparagus thoroughly before roasting to ensure crispiness. Do not overcrowd the pan to avoid steaming. Use finely grated Parmesan for best crisping. Add lemon zest before roasting but lemon juice after roasting for best flavor. Watch oven closely to prevent cheese from burning. Leftovers can be reheated in a 375°F oven for 5-7 minutes to restore crispiness.
