  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup cooked and crumbled bacon bits (optional)
  • 2 stalks green onions, thinly sliced
  • Marshmallow Drizzle:
  • 1 cup mini marshmallows
  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream or whole milk
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes into evenly sized fries, about 1/4-inch thick.
  3. In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  4. Arrange the fries in a single layer on a parchment-lined or silicone baking mat–lined rimmed baking sheet, ensuring they are not crowded.
  5. Bake for 20 minutes, then flip the fries gently with a spatula and bake for another 15 minutes or until golden and crispy.
  6. While the fries bake, prepare the marshmallow drizzle: In a small saucepan over low heat, melt the butter. Add mini marshmallows and cream, stirring constantly until smooth and gooey. Remove from heat and stir in vanilla extract.
  7. Once fries are done, remove from oven and immediately sprinkle with shredded cheddar cheese and bacon bits. Return to oven for 3-5 minutes until cheese melts.
  8. Drizzle the warm marshmallow sauce over the fries, then sprinkle with fresh green onions.
  9. Serve immediately while crispy and gooey.

Notes

Dry fries thoroughly before baking to avoid sogginess. Use a wire rack on the baking sheet or a convection oven for extra crispiness. Melt marshmallows on low heat and stir constantly to prevent scorching. Serve immediately for best texture. For dairy-free, substitute butter and cream with coconut oil and coconut milk, and use dairy-free cheese. Bacon bits should be checked for gluten if needed.
