Instructions

  1. Preheat the oven to 425°F (220°C). Wash and scrub potatoes thoroughly.
  2. Pat potatoes dry. Pierce each potato 4-5 times with a fork.
  3. Rub each potato with olive oil, then sprinkle with kosher salt and black pepper. Place on a baking sheet (use a wire rack if available).
  4. Bake for 50-60 minutes, turning halfway through, until skins are crispy and insides are soft.
  5. Let potatoes cool for 5-10 minutes. Slice each potato in half lengthwise.
