  • 1/4 cup honey (85g), preferably mild wildflower honey
  • 2 tablespoons light corn syrup (30ml)
  • 1 teaspoon baking soda
  • 2 tablespoons water (30ml)
  • Optional: 1/2 teaspoon vanilla extract
  • Optional: pinch of salt

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat and set aside. Measure all ingredients beforehand (about 10 minutes).
  2. In a heavy-bottomed saucepan, combine 1 cup granulated sugar, 1/4 cup honey, 2 tablespoons light corn syrup, and 2 tablespoons water. Stir gently just to combine (2 minutes).
  3. Place the pan over medium heat. Attach a candy thermometer to the side, ensuring it does not touch the bottom. Let the sugar mixture boil without stirring for 8–12 minutes until it reaches 300°F (150°C) – the hard crack stage.
  4. Remove the pan immediately from heat once the temperature is reached. If no thermometer is available, test by dropping a small amount into ice water; it should harden and snap when bent.
  5. Quickly whisk in 1 teaspoon baking soda and optional 1/2 teaspoon vanilla extract. Stir vigorously but gently; the mixture will foam and bubble up rapidly (about 30 seconds).
  6. Pour the mixture onto the prepared baking sheet and spread gently with a spatula if needed, avoiding pressing down to keep it airy and crisp (1–2 minutes).
  7. Allow the candy to cool completely at room temperature for at least 30 minutes. Once cool, break into irregular shards by hand or with a knife.

Notes

Avoid stirring the sugar mixture while boiling to prevent crystallization. Work quickly after adding baking soda to trap airy bubbles. Use a heavy-bottomed pan for even heat distribution. Store candy in an airtight container at room temperature to maintain crispness. For vegan version, substitute honey with maple syrup and corn syrup with agave nectar, noting texture may be softer.
