  • 1 1/2 cups warm water (350ml, about 105°F)
  • 2 1/4 teaspoons active dry yeast (7g)
  • 1 tablespoon sugar (12g)
  • 2 teaspoons fine sea salt (12g), divided
  • 1/4 cup extra virgin olive oil (60ml), plus more for greasing and drizzling
  • 23 tablespoons fresh rosemary, chopped
  • 12 teaspoons flaky sea salt
  • Extra olive oil for topping

Instructions

  1. In a large bowl, combine warm water, active dry yeast, and sugar. Stir and let sit for 5-10 minutes until foamy.
  2. Add flour and 1 1/2 teaspoons fine sea salt to the yeast mixture. Pour in olive oil. Mix until a shaggy dough forms.
  3. Knead the dough in the bowl for 2-3 minutes until it comes together. Cover and let rise in a warm spot for 1 hour, until doubled.
  4. Generously grease a 9×13-inch baking pan with olive oil. Transfer the risen dough into the pan, gently stretching and pressing it out to fit.
  5. Cover the pan loosely and let the dough rise for another 20-30 minutes. Preheat oven to 425°F (220°C).
  6. With oiled fingers, press deep dimples all over the dough. Drizzle with more olive oil, sprinkle chopped rosemary, and finish with flaky sea salt. Press toppings gently into the dough.
  7. Bake for 20-25 minutes, until deeply golden and edges are crispy.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.

Notes

For extra flavor, let the dough rise overnight in the fridge. Use a metal pan for the crispiest crust. You can customize toppings with cherry tomatoes, olives, or cheese. If dough is sticky, add a sprinkle of flour; if dry, add a teaspoon of water. Focaccia is best served warm but can be stored at room temperature for 2 days or frozen for longer storage.
