  • 3 cups (270g) rolled oats
  • 1 cup (120g) raw nuts (almonds, pecans, walnuts), roughly chopped
  • ½ cup (45g) unsweetened shredded coconut
  • ⅓ cup (80ml) maple syrup
  • 2 tablespoons brown sugar
  • 3 tablespoons virgin coconut oil, melted
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup (75g) dried cranberries or cherries (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine rolled oats, chopped raw nuts, shredded coconut, cinnamon, nutmeg, ground ginger, and salt.
  3. In a small bowl, whisk together maple syrup, brown sugar, melted virgin coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and mix thoroughly with a wooden spoon or spatula until every oat and nut is coated.
  5. Spread the granola evenly on the prepared baking sheet in a single layer.
  6. Bake for 25-30 minutes, stirring every 10 minutes to ensure even toasting. Watch closely during the last 5 minutes to avoid burning.
  7. Remove from oven and let cool completely on the baking sheet; the granola will crisp up as it cools.
  8. Once cool, stir in dried cranberries or cherries if using.
  9. Store in an airtight container at room temperature for up to two weeks or freeze for longer storage.

Notes

Use certified gluten-free oats for gluten-free version. For nut-free, substitute nuts with pumpkin or sunflower seeds. Stir granola every 10 minutes during baking to prevent burning. Let granola cool completely to achieve crispiness. Adding an extra tablespoon of maple syrup can help with clumping. Reheat in oven at 300°F for 5 minutes to refresh crispiness.
