  • 1 cup (120g) all-purpose flour
  • 1 tablespoon (15g) cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup (120ml) milk (regular or plant-based)
  • 2 large eggs, beaten
  • Panko breadcrumbs (or regular breadcrumbs)
  • Vegetable or canola oil for frying
  • Optional: Cayenne pepper or chili flakes for heat

Instructions

  1. Wash and dry the mushrooms thoroughly. Trim the stems if needed, but keep the mushrooms whole.
  2. In a mixing bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, and black pepper. Gradually add milk and beaten eggs, whisking until smooth.
  3. Place breadcrumbs in a separate bowl. Dip each mushroom into the batter, letting the excess drip off, then coat it generously in the breadcrumbs.
  4. In a heavy pot or deep fryer, heat oil to 350°F (175°C).
  5. Carefully add the coated mushrooms to the hot oil in batches. Fry for 3-4 minutes or until golden brown and crispy.
  6. Use a slotted spoon to transfer the fried mushrooms to a plate lined with paper towels. Sprinkle with a pinch of salt immediately.
  7. Serve warm with your favorite dipping sauce.
