  • 1 can refrigerated biscuit dough (16 oz)
  • All-purpose flour, for dusting (optional)
  • 8 oz brie cheese, rind trimmed and cut into small cubes
  • 1 cup fresh or frozen cranberries
  • 2 tbsp cranberry sauce or jam
  • 1/4 cup unsalted butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme or rosemary
  • Pinch of salt and pepper
  • Chopped fresh parsley (optional garnish)
  • Crushed pecans or walnuts (optional garnish)
  • Drizzle of honey (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, mix together brie cubes, cranberries, and cranberry sauce or jam. Chop fresh cranberries if large.
  3. Open biscuit dough and separate into 8 pieces. Dust hands and surface lightly with flour if needed.
  4. Flatten each dough piece into a 3-inch circle. Place a spoonful of brie-cranberry mixture in the center. Pinch edges to seal and form a ball.
  5. Arrange filled dough balls seam-side down on the baking sheet, spacing closely so they touch slightly.
  6. Melt butter and stir in garlic powder, thyme or rosemary, salt, and pepper. Brush generously over each dough ball. Sprinkle with chopped nuts if desired.
  7. Bake for 18–20 minutes, until golden brown and crisp. Tops should be deeply browned and cheese bubbling at edges.
  8. Let cool for 5 minutes before serving. Garnish with parsley, drizzle with honey, or add extra cranberry sauce if desired.

Notes

Seal dough edges tightly to prevent cheese from leaking. If bites brown too quickly, tent with foil for last 5 minutes. Prep filled dough balls up to 4 hours ahead and refrigerate until baking. For gluten-free or dairy-free, use appropriate dough and cheese substitutes. Reheat leftovers in the oven for best crispiness.
