Instructions

  1. Peel, core, and dice 2 medium apples into small, bite-sized pieces (about ¼ inch). Set aside.
  2. In a large bowl, whisk together 1 cup all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, and 1 teaspoon ground cinnamon.
  3. In a separate bowl, beat 1 large room-temperature egg with ¾ cup buttermilk and 1 teaspoon vanilla extract.
  4. Pour wet ingredients into the dry and gently fold with a spatula until just combined. Do not overmix—lumps are okay! Fold in the diced apples until evenly distributed.
  5. Pour vegetable oil into your skillet to a depth of about 2 inches and heat to 350°F (175°C). Use a thermometer to keep it steady.
  6. Using a spoon or small ice cream scoop, carefully drop 2-3 spoonfuls of batter into the hot oil, leaving space between them. Fry in batches to avoid overcrowding. Cook about 3-4 minutes per side, flipping gently once the edges turn golden brown.
