Crispy Cheesy Tater Tot Casserole with Ground Beef

A quick and easy comfort food casserole featuring seasoned ground beef, creamy cheesy filling, and crispy golden tater tots. Perfect for family dinners and potlucks.

  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 32 ounces frozen tater tots
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables, thawed (peas, carrots, corn)
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds.
  3. Add ground beef to skillet, breaking it up with a spatula. Cook until no longer pink, about 6-8 minutes. Season with salt, pepper, and Worcestershire sauce. Drain excess fat.
  4. In a large bowl, combine cream of mushroom soup, sour cream, and thawed mixed vegetables. Stir in cooked ground beef mixture until evenly coated.
  5. Pour beef and veggie mixture into prepared baking dish and spread evenly. Top with shredded cheddar cheese, reserving some for later.
  6. Arrange frozen tater tots in a single layer over the cheese.
  7. Bake uncovered for 35-40 minutes, until tater tots are crisp and golden and cheese is bubbly. Tent with foil if tots brown too quickly.
  8. In the last 5 minutes, sprinkle reserved cheddar cheese on top to melt into gooey pockets.
  9. Let casserole rest for 5 minutes before serving.

Notes

For extra crispy tater tots, toss them in a hot skillet with a little oil before layering. Drain cooked beef well to avoid a watery casserole. Use sharp cheddar for best flavor and melting. Let casserole rest before serving to set properly. Check tater tots around 30 minutes to prevent burning. Can be made ahead and refrigerated overnight before baking.
