  • 1 ¼ cups (300 ml) warm water (about 110°F/43°C)
  • 1 tbsp granulated sugar
  • 3 ½ cups (440 g) all-purpose flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • ½ cup (115 g) unsalted butter, melted and slightly cooled
  • 34 cloves garlic, finely minced
  • 1 tbsp freshly chopped parsley (optional)
  • ½ tsp salt
  • 2 cups (200 g) shredded mozzarella (low-moisture preferred)
  • ½ cup (50 g) grated Parmesan

Instructions

  1. Activate the yeast (5-7 minutes): In a large bowl, combine warm water (110°F/43°C) with sugar and yeast. Stir gently and let sit until foamy.
  2. Mix the dough (5 minutes): Add flour, salt, and olive oil to the yeast mixture. Stir until dough starts to come together.
  3. Knead the dough (8-10 minutes): On a lightly floured surface, knead until smooth and elastic.
  4. First rise (1 hour): Place dough in lightly oiled bowl, cover, and let rise in warm spot until doubled in size.
  5. Prepare garlic butter: Mix melted butter with minced garlic, parsley, and salt. Set aside.
  6. Shape breadsticks (10 minutes): Punch down dough and roll out on parchment-lined baking sheet into 12×14-inch rectangle. Sprinkle half the mozzarella and Parmesan evenly over dough, fold dough over cheese, and press to seal.
  7. Cut breadsticks: Slice dough into 12 strips about 1 inch wide. Twist each strip a couple of times and place apart on baking sheet.
  8. Second rise (20-30 minutes): Cover loosely and let puff up.
  9. Preheat oven to 400°F (200°C).
  10. Brush breadsticks with garlic butter and bake (15-18 minutes) until golden brown and crispy with cheese oozing slightly.
  11. Brush remaining garlic butter over warm breadsticks after baking. Serve immediately.

Notes

If cheese bubbles too aggressively, tent breadsticks with foil halfway through baking to prevent burning. Use warm water to activate yeast properly. Brush garlic butter generously before and after baking for best flavor and moisture. Twisting breadsticks helps create crispy edges. Dough can be made ahead and refrigerated overnight.
