Instructions

  1. Place butter in a medium saucepan over medium heat. Stir frequently as it melts, foams, and turns golden brown (about 6-8 minutes). Watch for brown bits and a nutty aroma. Remove from heat and let cool for 15 minutes.
  2. In a large mixing bowl, combine cooled brown butter, brown sugar, and granulated sugar. Beat until creamy and fluffy (about 2 minutes).
  3. Add eggs and vanilla extract. Beat until fully combined and mixture is silky and thick.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and sea salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low until just combined. Do not overmix.
  6. Gently stir in toffee bits and optional nuts or chocolate chips. Dough will be slightly sticky.
  7. Cover bowl and refrigerate dough for at least 30 minutes (up to 2 hours).
