Crispy Blueberry Cobbler Recipe with Vanilla Ice Cream

  • 4 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (optional)
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3/4 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cut into cubes
  • Pinch of salt
  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven to 375°F (190°C). Position rack in the center.
  2. In a large mixing bowl, gently toss blueberries with granulated sugar, cornstarch, lemon juice, lemon zest, cinnamon, and a pinch of salt until evenly coated.
  3. Pour blueberry mixture into a 9×13-inch baking dish and spread evenly.
  4. In a medium bowl, whisk together flour, oats, brown sugar, granulated sugar, baking powder, cinnamon, and a pinch of salt.
  5. Add cold butter cubes and use a pastry cutter, fork, or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  6. Sprinkle the crumbly topping evenly over the blueberry mixture. Do not press down.
  7. Bake for 35–40 minutes, or until the topping is golden brown and the berries are bubbling around the edges. If using frozen berries, bake 5 minutes longer.
  8. Remove from oven and let cool for 10–15 minutes to allow the filling to thicken and the topping to crisp.
  9. Serve warm in bowls, topped with vanilla ice cream.

Notes

For gluten-free, use almond flour and certified gluten-free oats. Keep butter cold for a crispy topping. If using frozen berries, add 1 extra tablespoon cornstarch and bake 5 minutes longer. Broil for 1–2 minutes at the end for extra crispiness. Serve warm for best texture; leftovers can be reheated and broiled to revive crispiness.
