  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/3 cup milk (or dairy-free alternative like almond milk)
  • 1 cup panko breadcrumbs
  • 1/4 cup mayonnaise (or vegan mayo)
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • Optional garnish: chopped green onions and sesame seeds

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and dry the cauliflower, then cut into bite-sized florets.
  3. In a mixing bowl, whisk together flour, cornstarch, baking powder, egg, and milk until smooth.
  4. Dip each cauliflower floret into the batter, letting excess drip off, then coat with panko breadcrumbs. Place on the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  6. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey to prepare the bang bang sauce. Adjust spice level to taste.
  7. Drizzle or toss the baked cauliflower bites with the bang bang sauce. Garnish with green onions and sesame seeds if desired.
