A quick and easy snack featuring spicy jalapeños stuffed with creamy cheese and wrapped in crispy bacon, perfect for parties and casual get-togethers.

  • 12 fresh jalapeños, medium-sized, washed and halved lengthwise
  • 8 oz (225 g) full-fat cream cheese, softened
  • 12 slices thin-cut bacon
  • 1/2 cup (50 g) shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top if available.
  2. Slice each jalapeño in half lengthwise and scoop out the seeds and membranes. Set aside.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, and black pepper. Mix until smooth and well blended.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small scoop.
  5. Wrap each stuffed jalapeño half tightly with one slice of bacon. Secure with a toothpick if needed.
  6. Place the bacon-wrapped poppers on the wire rack over the baking sheet.
  7. Bake for 20-25 minutes or until bacon is crispy and cheese filling is bubbly. Rotate the pan halfway through baking for even cooking.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

Use thin-cut bacon for best crispiness. Let poppers rest 5 minutes after baking to avoid burning your mouth. Rotate baking sheet halfway through cooking for even crisping. For less heat, remove jalapeño membranes or use milder peppers like poblanos. Air fryer method: 375°F (190°C) for 12-15 minutes, flipping halfway.
