Instructions

  1. Wash and peel the sweet potatoes using a vegetable peeler. You may leave the skin on for extra texture and nutrients if desired.
  2. Slice the sweet potatoes thinly (about 1/16 inch or 1.5 mm) using a mandoline slicer for even thickness.
  3. Soak the slices in a bowl of cold water for 15-20 minutes to remove excess starch.
  4. Drain and pat the slices completely dry with a clean kitchen towel or paper towels.
  5. Preheat the air fryer to 350°F (175°C) for about 3 minutes.
  6. Toss the sweet potato slices lightly with 1 tablespoon of oil in a dry bowl, coating evenly but not drenched.
  7. Arrange the slices in a single layer in the air fryer basket without overlapping; cook in batches if necessary.
  8. Air fry at 350°F (175°C) for 10 minutes, flipping the chips halfway through (around 5 minutes) using tongs for even browning.
  9. While chips cook, mix 1 teaspoon cinnamon, 2 tablespoons granulated sugar, and a pinch of salt in a small bowl to make the cinnamon sugar dust.
  10. Remove the chips when golden and crispy, transfer to a cooling rack or parchment-lined plate.
  11. While still warm, sprinkle the cinnamon sugar dust evenly over the chips to allow it to stick.
  12. Repeat the cooking and dusting process with remaining slices.
