Instructions

  1. Wash and peel the russet potatoes. Cut them into sticks about 1/4 inch (0.6 cm) thick, keeping them as uniform as possible for even cooking.
  2. Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes or up to 2 hours to remove excess starch.
  3. Drain the potatoes and pat them dry thoroughly with kitchen towels to remove all moisture.
  4. In a dry bowl, toss the dried fries with 2 tablespoons of oil, 1 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, and 1/4 teaspoon black pepper until evenly coated.
  5. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  6. Place fries in the air fryer basket in a single layer without overcrowding. Cook for 15 minutes, shaking the basket halfway through.
  7. Remove fries and let them rest and cool for 5 minutes to redistribute moisture.
  8. Return fries to the basket and air fry at 400°F (205°C) for an additional 7-10 minutes, shaking halfway through. Watch closely to avoid burning.
  9. Taste and adjust salt if needed. Garnish with fresh parsley if using. Serve immediately.
