A creamy Tuscan chicken dish featuring sun-dried tomatoes, spinach, and a luscious cream sauce that’s easy to prepare and perfect for cozy dinners or impressing guests.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/2 cup chopped sun-dried tomatoes packed in oil (about 70 g), drained but keep a little oil
  • 3 cups fresh baby spinach (about 90 g)
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (about 50 g)
  • 1/2 cup low sodium chicken broth (120 ml)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried Italian herbs (blend of basil, oregano, thyme)
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: 1/4 cup white wine (60 ml) to deglaze the pan

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian herbs. Set aside.
  2. Heat olive oil and butter in a large skillet over medium-high heat until butter is melted and foaming.
  3. Add chicken breasts and sear for about 5-6 minutes on each side until golden brown and cooked through (internal temperature around 165°F / 74°C). Remove chicken and set aside, tented with foil to keep warm.
  4. Lower heat to medium and add minced garlic to the same pan. Stir for 30 seconds until fragrant.
  5. Add chopped sun-dried tomatoes and cook for 1-2 minutes to release their flavor.
  6. Pour in chicken broth and white wine if using, scraping up browned bits from the pan. Simmer for 2-3 minutes to reduce slightly.
  7. Stir in heavy cream and grated Parmesan cheese. Simmer gently, stirring frequently, until sauce thickens slightly, about 3-5 minutes. Add more broth or cream if sauce becomes too thick.
  8. Add fresh spinach to the sauce and stir until wilted, about 1-2 minutes.
  9. Return chicken breasts to the skillet, nestle into the sauce, spoon sauce over the top, and simmer together for 2-3 minutes to warm through and meld flavors.
  10. Taste and adjust seasoning with salt, pepper, and herbs. Sprinkle red pepper flakes if desired.
  11. Serve chicken with plenty of creamy sauce, garnished with fresh basil or parsley if available.

Notes

For best results, sear chicken well to lock in juices and create a golden crust. Use sun-dried tomatoes packed in oil for richer flavor. Keep heat moderate when adding cream to prevent curdling. Freshly grated Parmesan melts better than pre-grated. Optional splash of white wine adds acidity and depth. Can substitute chicken thighs for juicier meat. Sauce thickens slowly; do not rush simmering.
