A rich and velvety chicken dish featuring garlic, sun-dried tomatoes, and a creamy Parmesan and cream cheese sauce. Perfect for cozy dinners and ready in under 30 minutes.

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, finely minced or pressed
  • ½ cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 1 cup heavy cream (240 ml)
  • ½ cup freshly grated Parmesan cheese
  • 2 oz cream cheese, softened (about 60 g)
  • 2 cups fresh spinach, roughly chopped (optional)
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, thyme)
  • Salt and pepper to taste
  • ½ cup chicken broth (120 ml), low sodium

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt, pepper, and Italian seasoning. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Remove chicken and keep warm.
  3. Reduce heat to medium. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir for 1 minute.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream, Parmesan cheese, and cream cheese. Whisk gently until smooth and creamy. Add more broth or cream if sauce is too thick.
  6. Add chopped spinach and cook 1-2 minutes until wilted and bright green.
  7. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over top, and cook on low heat for 3-4 minutes to meld flavors.
  8. Taste and adjust seasoning with salt and pepper if needed. Remove from heat.
  9. Serve chicken topped with creamy sauce, garlic, and sun-dried tomatoes. Pair with crusty bread or pasta.

Notes

For thicker sauce, stir in 1 teaspoon cornstarch mixed with cold water before adding spinach. Let chicken rest a few minutes after cooking to stay juicy. Use low heat when adding cream to prevent separation. Adjust saltiness due to sun-dried tomatoes’ varying salt content. Can add red pepper flakes for a spicy kick.
