Creamy Strawberry Cheesecake Bliss

A beginner-friendly cheesecake recipe with a silky smooth texture and the perfect balance of creamy sweetness and fresh strawberry flavor.

  • ¼ cup granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • ½ cup heavy cream
  • 1 cup fresh strawberries, pureed
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons strawberry jam (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the base of your springform pan, creating an even layer. Bake for 8 minutes, then set aside to cool.
  2. In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add sugar and continue mixing until well incorporated. Beat in the eggs one at a time, then mix in the vanilla extract, sour cream, and heavy cream. Fold in the strawberry puree until fully combined.
  3. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Place the pan in a water bath (wrap the bottom of the pan in foil and set it in a larger pan filled halfway with hot water). Bake for 55-60 minutes, or until the center is slightly jiggly.
  4. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to set.
  5. Arrange sliced strawberries on top of the cheesecake. If desired, heat the strawberry jam slightly and drizzle it over the strawberries for extra shine and flavor.
