  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 4 medium Yukon Gold potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Dice the steak into bite-sized cubes and season with salt and pepper. Set aside.
  2. Heat a large pot or Dutch oven over medium-high heat. Add 1 tablespoon of butter and sear the steak pieces until browned on all sides, about 3-4 minutes. Remove steak and set aside.
  3. Add the remaining tablespoon of butter to the pot, followed by the chopped onion, carrots, and celery. Sauté for 5 minutes, stirring occasionally, until softened.
  4. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
  5. Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to eliminate the raw flour taste.
  6. Gradually pour in the beef broth, stirring constantly to prevent lumps. Bring the mixture to a simmer.
  7. Add the diced potatoes, thyme sprigs, and the reserved steak. Simmer for 20 minutes, or until the potatoes are tender.
  8. Reduce the heat to low and stir in the heavy cream. Simmer for 5 more minutes, ensuring everything is well combined. Remove thyme sprigs before serving.
  9. Taste and adjust seasoning with more salt and pepper as needed. Serve hot with crusty bread or crackers.

Notes

For a gluten-free version, replace the flour with cornstarch or arrowroot powder. Add extra broth if the soup feels too thick. Searing the steak properly enhances flavor.
