Instructions

  1. Place cream cheese in a large bowl and let it soften at room temperature until smooth. Microwave for 10 seconds if needed.
  2. Add powdered sugar to the cream cheese and blend with a hand mixer on medium speed until fully combined and fluffy. Scrape the bowl as needed.
  3. Melt semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring each time, until smooth and glossy. Alternatively, use a double boiler.
  4. Pour melted chocolate into the cream cheese mixture. Add peppermint extract and mix until smooth and well-blended. Fold in crushed peppermint candies gently.
  5. Cover the bowl with plastic wrap and chill in the fridge for at least 30 minutes (up to 2 hours) until firm but scoopable.
  6. Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, scoop out portions and roll into 1-inch balls.
  7. Optional: Melt white chocolate chips and dip each truffle, letting excess drip off. Place on the tray and sprinkle with more crushed peppermint candies. Alternatively, roll truffles in cocoa powder or powdered sugar.
  8. Chill the finished truffles on the tray for 10 minutes to firm up, or 30 minutes if dipped in chocolate, until the coating is hard.
