  • 10 ounces semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil or vegetable shortening

Instructions

  1. In a medium bowl, blend cream cheese and unsalted butter with a hand mixer until smooth and fluffy (about 1 minute).
  2. Add peppermint extract and a pinch of salt. Gradually beat in confectioners’ sugar, ½ cup at a time, scraping down sides as needed.
  3. If the mixture is too stiff, add milk or cream 1 teaspoon at a time until you get a soft, pliable dough.
  4. Scoop out 1 tablespoon portions of filling and roll gently between your palms to make smooth balls. Flatten each ball into a disc about 2 inches wide and ⅓ inch thick. Place patties on a parchment-lined baking sheet.
  5. Freeze the tray for 20–30 minutes, until firm but not rock solid.
  6. Combine semi-sweet chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring after each, until smooth and glossy (about 1½–2 minutes), or melt over a double boiler.
  7. Using two forks, dip each chilled peppermint patty into the melted chocolate, letting excess drip off before returning to the parchment-lined tray.
  8. While chocolate is wet, sprinkle with crushed candy canes or holiday sprinkles. Drizzle with melted white chocolate if desired.
  9. Let patties set at room temperature for 30 minutes, or refrigerate for 10 minutes.
  10. Once set, gently peel patties off parchment. Store in an airtight container lined with wax paper.
