  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups small pasta shapes (elbow, ditalini, or shells)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Start by chopping your vegetables—dice the carrots, slice the celery, mince the garlic, and chop the onion and parsley.
  2. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the garlic, onion, carrots, and celery, and sauté for about 5-7 minutes until fragrant and softened.
  3. Pour in 6 cups of chicken or vegetable broth. Stir in the Italian seasoning, and bring the mixture to a simmer.
  4. Add 2 cups of your favorite small pasta shapes to the simmering broth. Cook for about 8-10 minutes or until the pasta is tender.
  5. Lower the heat and stir in 1 cup of heavy cream and 1/2 cup of freshly grated Parmesan cheese. Let it simmer for 2-3 minutes to thicken slightly.
  6. Add salt and pepper as needed, tasting as you go.
  7. Ladle the soup into bowls and sprinkle with fresh parsley for a pop of color. Serve warm and enjoy!
