  • 12 ounces andouille sausage, sliced
  • 1 cup long-grain white rice, rinsed
  • 2 cups chicken broth
  • 4 ounces cream cheese, softened
  • 1 cup diced bell peppers (red or green)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley, a handful chopped (optional)

Instructions

  1. Slice the andouille sausage into 1/4-inch rounds. Dice the bell peppers, finely chop the onion, and mince the garlic. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook for 4-5 minutes, stirring occasionally, until browned and slightly crispy. Remove sausage and set aside.
  3. In the same skillet, add onion and bell peppers. Sauté for 3-4 minutes until softened and fragrant. Stir in minced garlic and cook for another 30 seconds.
  4. Add rinsed rice to the skillet, coating it with oil and veggies. Stir in Cajun seasoning and toast the rice with the veggies for about 2 minutes.
  5. Pour in chicken broth and stir to combine. Bring to a gentle boil, then reduce heat to low. Cover with a tight-fitting lid and simmer for 18-20 minutes until rice is tender and liquid mostly absorbed.
  6. Remove lid and stir in softened cream cheese until melted and creamy. Add browned sausage back to the skillet and stir to combine. Season with salt and black pepper to taste.
  7. Sprinkle chopped fresh parsley over the top. Let sit off heat for a couple of minutes before serving to let flavors meld.

Notes

Rinse rice to prevent stickiness. Brown sausage well for texture and flavor. Use a tight-fitting lid to cook rice evenly. Adjust seasoning after adding cream cheese as it mellows spices. If rice is undercooked, add more broth and cook longer. Cream cheese should be softened to avoid clumps.
