Instructions

  1. Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until mixture resembles wet sand and holds together when pressed. Press firmly into bottom and up sides of a 9-inch pie dish. Chill in fridge for about 15 minutes.
  2. Prepare the Peanut Butter Filling: Beat softened cream cheese and peanut butter until smooth (2-3 minutes). Add powdered sugar and vanilla extract; mix until incorporated. In a separate chilled bowl, whip heavy cream until stiff peaks form (3-5 minutes). Gently fold whipped cream into peanut butter mixture. Pour filling into chilled crust and smooth top. Refrigerate at least 2 hours until set.
  3. Make the Chocolate Ganache Topping: Place chocolate chips in heatproof bowl. Heat heavy cream in saucepan until just simmering. Pour hot cream over chocolate; let sit 2 minutes. Stir until smooth and glossy. Stir in butter if using. Let ganache cool slightly but remain pourable.
  4. Assemble the Pie: Pour ganache evenly over set peanut butter filling. Spread carefully to cover. Refrigerate at least 1 hour to firm ganache.
